Low Carbohydrate Fruits and Veggies

Here are a few fruits and vegetables that are very low in carbohydrates and therefore make excellent snack foods as well as for recipes.

Vegetables

  • Sprouts (bean, alfalfa, etc.)
  • Greens – lettuces, spinach, chard, etc.
  • Hearty Greens – collards, mustard greens, kale, etc.
  • Radicchio and endive count as greens
  • Herbs – parsley, cilantro, basil, rosemary, thyme, etc.
  • Bok Choy
  • Celery
  • Radishes
  • Sea Vegetables (Nori, etc)
  • Cabbage (or sauerkraut)
  • Mushrooms
  • Jicama
  • Avocado
  • Cucumbers (or pickles without added sugars)
  • Asparagus

Fruits

  • Small Amounts of Lemon or Lime
  • Rhubarb
  • Raspberries
  • Blackberries

  1. Drink plenty of water or other calorie-free beverages.
  2. Think of items you can ADD to your diet, not items you should take away (maybe more vegetables?)
  3. Determine if you are really hungry, or are you bored, upset etc?
  4. Be careful with nighttime snacks   Eating a bag of chips while watching TV at night isn’t as good as say a 100 calorie snack pack.
  5. Enjoy your favorite foods – just do so in moderation.
  6. Enjoy your treats away from home – walking to get an ice cream adds a little exercise.
  7. Eat more smaller meals during the day – this will help keep your metabolism working.
  8. Don’t forget the protein - It’s more satisfying than carbohydrates and helps with fat burning.
  9. Spice it up – adding spices or chilies to you food will ad a flavor boost and help you feel satisfied.
  10. Stock your kitchen for success!   Items like fat-free microwave popcorn, frozen veggis, whole grain wraps etc.
